SALMON STEAKS IN SOUR CREAIH

1'6 pounds salmon. out in steaks

l‘; cups sour cream

‘é teaspoon dry mustard

i tablespoon lemon Juice

‘ii teaspoon grated lemon rind

Salt

Freshily ground pepper

Oil or butter _

Saute salmon steaks in oil, or but- ter. Cmniblne seasonings. lemion juice and rind with sour cream. Place salmon in baking dish and pour the sour cream. mixture over it. Bake for 35 minutes in a 350 degree oven.

METHOD; Stone the dates and ‘blanch and skin tihe almonds and put thcse together through the food chopper. Add the vanilla. and lemon juice and shape the mixture tnto small balls.

Beat the egg whites until they are stiff. but not dry, and gradually beat in the sugar. -

The fruit balls are them covered udih meringue. This is done by placing a fruit ball on a. teaspoon and lowering it into the meringue so that it is well covered. Place on a greased baking sheet. and bake in a fairly slow oven i275 defl- F-l "n" m the meringue coating is dry. 15 to 20 minutes.
