The Dairy Industry.

Sir —If any evidence were wanting to prove that the dairy industry of this Pro. vince ig not on # proper footing, we have it in thy fact that large quantities of Q iebec nutter are nuw being brought to the Island by the Stanley. It is not creditable to the sgriculrurists of this ‘‘ Garden of the Guif” thatorr merchants should have te gv to another Province of the Dominion for butter :o supply the local demand Oae # the largest grocery concerns of the city recently advertised for a few packages of good table butrer, with the result that they did not get them. The firm in question wanted this barter for tneir custo vers, aud they were, nodoubt, willing to pay a fair price for a good article. The god home- made article did not, however, material:ze, and the firm, failing to procure that which our own dairies should be prepared to fur- nish, are forced to handle the product of Quebec. This is. I have no doubt, the ex- perience of other local grocers also ; but it is sumething which should not and weuid not occur if that attention were given to dairyir which the importance of the in- dustry demands.

Why is it that this Province, famed as it is for its agricultural capabilities, cannot produce a sufficient quantity of god, mar- ketable butter and cheese, to suppiy the wants of our own people? Isa because of a lack of natural advantages / Are we, in this respect, behind the Province of Que- bee, upon which we are now drasing tor our butter supply? I think not. My idea is that this Island is possessed of as many advantagea to help on the work of dairying as any Province of the Dominion, with the single exception, perhaps, of Ontario. We have good summer pas urage, and with pro- per cultivation our soil is capsbie of producing abundantly of hay, grain and ruots. What, then, is the cause of our inferior position as a dairy country? Concomitant with improved breeding is good feeding. The former is utterly usel: 3s without being backed by the latter. The scrub may eke out a miserable existence on & starvation allowance that would be death to the weil-bred animal. But there is no doubt, whatever, that where good breeding 16 sup- plemented by generous feeding a sou t found- ation is laid, on which to build a successtul dairy business, it correct -nethods be followe:t. And in this connection 1 think you would render the dairy interests of this Province substantial service if you would reproduce weekly a series of interesting and instructive letters on butter-making trom the clever pen of Mrs. E M Jones, now being published in the week y issue of the Montreal Star. Tnere is no question but our people rre in general badiy in noed of inecruction in the art of butter-making, and as M:a, Jones has herself ne ** through the mill” in all its stages, rom the milking of the cow to the placing of gilt-edged butter on the market, her ex: perience, given in her own words, could uot fail to be beneficial to those who are willing to turo their opportunities to the beat accounts. By her own industry and perseverance Mrs Jones has established ‘he finest herd Jerseys in the Domioivnfof Can- ada, and she 18 now reaping the reward of her labors by reslizing the top market price ror all the gilt edge butter produced in her own dairy, the annual ourput being several thousands of pounds. What has been accomplished by Mrs J. at Brockville, Ont , is capable of accomplishment in this Provinee, by any man or woman pose-seed of the requisite resolution or dete: mination to overcome ‘difficulties that might at firet present themselves. Mr. R. Brow, success to him, is building up a nice herd of that excellent butter breed, the Guernsey. His dairy has already quite a reputation for producing butter of the finest queitty, which is sold in advance of manvfae.ure, at th- nighest local market price. If otaers could be induced to follow Mr. Brows tooteteps, we would in a thort time be exporters of high class batter, instead of being importers of an article of common grade as is the case at present.
