A Sherbrooke Industry Which Has Gained a Reputation in Three Years.

Expensive Machinery Recently ut in Makes it One of the Best Equipped Breweries

in Canada.

While hundreds in all parts of the country know and appreciate the delicious flavors of the Silver Spring ales and port have not been privileged to visit the brev “wery itself, see its wonderful and complete equi ment and witness the remarkable process by which the far famed beverages of the Silver Sprirg Brewery are produced. leisure time cannot be employed in a more agreeable manner than a visit to this establish- ment, where visitors are always sure of a cor- dial welcome by the proprietor, Mr. S. C. Nutter, and the members of his staff. The writer made a visit to the brewery the other day, and was shown over the establishment by Mr. Cyril Gwyn Brewer and Manager from London, England, who has hal vast and valuable exp: r.ence in some of the largest and best breweries abroad, and is thor nughly ersed in the most modern style of brewing all a isses of ales and porter.

powerful filter strips every particle of yeast and c'ozg'ng substance from the beer and leaves it as brilliant as champ igne, and in their stead is amaigamated with the beer, natural carbonic acid gas which is received in steel tubes from a large New York brewery, which has a special plant, which cost some $40,000, for collecting the natural carbonic acid gas from large fermenting vats and compressed in these

steel tubes at a pressure of 1500 lbs to the square inch. This n aturé ul beer gas through the influence of the carbonater takes the place of the yeast in the beer, and it is therefore claimed that this beer is the height of purity.

Such is the Silver Spring Brewery ale.

The branch of porter known as the Silver Spring Cream Porter has grown into popular- ity so fast that special brews have to be made weekly. Some of the best hospitals in the United States as well as Canada order this porter. Doctors in all of the leading cities of Canada it freely in all cases of de- bility and for convalescence.

None of the cheap malt extracts sold ata much higher price ever give the same results. Porters as a rule are not brewed and are per- haps not as healthful as ale, but the Silver Spring Porter is prewed from roasted malt, imported direct trom John Plukett = tar.
