FREEZING FISH

Keep fish on ice. Freeze the same day as caught if possible Prepare fish for freezing just as you would do for cooking. Scale, eviscerate. and wash thoroughly. Cut large fish into desired sized

If you serve food it is in your power to do I lot for folks, be- cause man's health. his power to work; his capacity to have fun; and his life span depend upon the food he eats. Serve good. whole-

some well prepared food. Be- cause you serve food you can guide the choice of food. Most

people accept the' suggestion of a choice of food made by their waiter. For example, if you sug- gest milk instead of tea or coffee. more customers will take milk. If you suggest oranges or grape- fruit along with the breakfast special. people will eat. more of these healthful fruits. If you tell the customer how crisp and fresh the salad is today or how well a certain vegetable will go with the steak order. people will eat more vegetables.

When you serve food remember that you owe the customer every courtesy. Kecp the food clean and covered. Keep your fingers out of the food and dishes by always using a tray for serving; and a spoon or fork for lifting; and a good idea would be to wear a hair net or cap when cooking.

Your customers will come back for more if you keep dirty dishes and silverware out of sight. if you use plenty of clean hot water. soap and disinfectant on the din- ing part of your premises. People like to know that the dishes and silverware are clean. so sterilize these items at 1709 to kill germs. and do not "towel" them, let them dry in their racks before storing them on clean shelves. Because you serve food you must keep not only your prem- ises but yourself spoilcss. Kt-op your body and clothes clean. Wash your hands after visiting the toilet. Stay home if you are sick. even if it is "just a cold." Don't cough. spit. sneeze or smoke near food or dishes. Otherwire you may be responsible for sickness or death.
