Curried Limb

1% pounds veal

2 tablespoons dripping

‘.4 onion

V: apple

2 cups milk

1 tablespon flour

l teaspoon curry powder

l4 teaspoon salt

‘.6 teaspon pepper

Chop the onion and dice the apple fry in dripping, remove to a sauce- pan and- fry the veal in remaining dripping; add to onion and apple. Cover with milk and cook over boil- ing water until tender. Blend the flour and seasonings together with a little cold milk and stir into hot mixture. Stir until thick and serve on a platter with a border of boiled or steamed rlce.

1% pounds lean lamb from mid- die neck or leg

2 large onions, sliced thinly

l6 cup butter or dripping

$5 tablespoon curry powder

Boiling water

l teaspoon vinegar

4 tablespoons flour

l teaspoon tomato catsup.

Steamed or boiled rice

Wipe meat, out in Iii-inch pieces, sprinkle with salt, pepper and flour. Melt fat, add onions and meat and cook until meat ls browned. Add curry, and enourrh boiling water to cover. Heat slowly to boiling point, reduce heat, add vinegar and cat- aup and simmer until the meat is tender. Thicker: with flour mixed smoothly with water, season with salt and peper, and serve in a border -of boiled or steamed rice.

Veal, mutton or beef may be sub- stituted for lamb.

Curried Eggs

To two tablespoons melted butter add two tablespoons flour, c-re quar- ter teaspoon salt and one-qudrter teaspoon currypowder. Blend well and then add gradually I cup scald- ed milk. cook for ten minutes, stir-r. lng constantly. Add 1 cup cooked rice and mix thoroughly. Cut hard- cooked eggs in slices, and arrange attractively with the rice mixture. Serve hot.
