% cup grated cheese EVAPORATED MILK

Cook onions in 1 quart boiling salted water 5 to 10 minutes entil partially cooked. Drain. Melt butter in top of double boiler over low heat. Add flour and seasonings. Stir until smooth. Slowly add Carnation. Cook ever boiling water until thickened and smooth (about 16 minutes), stirring constantly. Add onions and peanuts. Mix well. Place mixture in 1% quart ' buttered casserole. Top with grated cheese. Bake in moderate even (380°F.) about 15 minutes.
