LEMON ICE IN FREEZER

If you're short of cream but you do want to make a frozen dessert. try this lemon ice. You can make it in your ice cream freezer and this recipe makes a quart.

1 cup sugar

3 cups water

1A teaspoon grated lemon rind ‘é cup lemon juice.

Add water to sugar in saucepan, heat to boiling and boil 5 minutes. Reenove from stove and cool_ in the meantime. wash lemons. grate rind, taking care to use only the yellow part; or, you can cut the lemon rtnd in very thin, tiny slivers and add to the ice instead of the grated rind.
