About Batter Overrun.

Question: Most of the patrons at our creamery bring milk, but a few bring cream only. Is it proper to allow any- thing for churn gain on the cream pa- trons when the pay is made according to the Babcock test? We find that cream testing from 17 to 22 per cent fat will gain from 30 to 45 per cent, while the gain on the whole product is only 12 to 15 per cent. We have been allowing a gain of 20 per eent on the cream patrons.

Answer: When the test is accurately made from representative samples, it is simply impossible to secure such over- runs as are mentioned above. The over- run with cream should be a trifle more than with milk, for the reason that the unavoidable losses in separating have already beer incurred. But this could

not be estimated at more than 1 per } cent all told. That isto say, if the over- {

ron with milk is 15 per cent, cream should not show more than 16 per cent. The thing todo is to get a more ac- curate test of the cream. And it may be well to repeat here what has been said many times before, that it is sim- ply impossible to test cream by the Bab- eock method if it is thick or sour, be- cause the pipette will not take a correct representative sample.—Hoard’s Dairy- man.

Dairy and Creamery.

Excitement, pain, worry and fright make cows hold up their milk. Treat a cow like a queen, and you will get your reward.

The time seems to be near when a good cow, well treated, will yield 400 pounds of buttern year. This will make less work for both farmer and creamery- man, The farmer will need to milk fewer cows, the creameryman wiil need to handle less milk.

One theory is that it is not well to feed acow while she is being milked, because the eating distracts her atten- tion from giving down the milk. Try both ways and see which is best.

Do you want to erect a monument to yourself that will last for generations? Then build a solid and handson:e stone silo.

Never kick acow or strike her. Never tie a rail or a chain across her back to make her give down her milk. This is barbarous. You only make the trouble worse,

Don’t use milk pumps. They will necessarily become foul. Arrange your creamery so that milk will run down hill to where you want it; that, too, through spouts or pipes that can be very easily and thoroughly cleaned.
