Joan of Arc Not Burned. History seems to be about to lose another ofits favorite stories in the case of Joanof Arc, as documentary evidence of the strongest kind goes to show that the old story of the burning of the maid of Orleans is a fable. There is proof that Joan lived in the town of Metz,fon the 20th of May,1436. She was then recognized by her brother. There is a record in the archives of Metz de- clearing her marriage to one Robert dez Armoises, knight, and mentionivg the birth of two sons. After Joan was married she wasknown as Dame Joan, and whenever she came to Orieans she was eumptuously entertained meat and wine at tho expenseof the town. There is a record which materi- aliy assists this proof and shows that the towa of Orleans paid her 210 livres 28 a recompence for services rendered during the siege. it was always difficult to believe that a king who owed his crown to a mere girl could suffer her to be burnt alive without raising his voice. It was necessary that the English soldiers, who believed her tobe a sorceress, should think she was burnt, but Charles VII. knew it was a farce, and could, therefore, afford to remain passive. If the statement that she was not burned cannot be declared authori- tatively, it atleast may be suffieiently sustained to clear considerably the atmosphere about Rouen.

Milk for Coffee.

That there isan appreciablo differ. ences between raw and boiled milk may be proved by taking equal quantities of each (the boiled samples having beea allowed to cool down), adding them to equal quantities of the same infusion of coffee, then critically testing the mixtures. The difference is sufficient to have long since established the prac- tice among all skillful cooks of scru- pulousty using boiled milk for making coffee. Lhave tried a similar experi- ment on tea, aod find that in this case cold milk is preferable. Why this should be, why boiled milk shonld be better for coffee and cold milk for tea, IT cannot tel!. lfany of my readers have uot done so already, let them try similar experiments with condensed milk, and I have no doubt that the ver- dict of the majority will be that it is passable in coffee, but very objectionu- able in tea, This is milk that has been very much cooked. The chief definable alteration effected by the boiling of milkisthe coagulation of the small quantity of albamen which it contains, This rises as it becomes solidified,which forms ascum on the surface, which may be lifted by a spoon and eaten, as it is perfectly wholesome and very butritious,
