Soak gelatine in cold water for 6 minutes. Scmd milk in double boiler, add sugar and salt. Add slightly beaten tgg yolk and cook 2-3 minutes longrr. Add soaked gelatine and stir until dissolved, Add iiavouring and cool until thick but, not completely set. Best with mtm-y egg beater until light and lmthy, Fold in stlifly beaten white. Pour into s mould and chll » until firm. Servo with a fruit sauce. Six servings.
