1 1-4 cups fine granulated sugar

1 egg and 2 tablespoons sifted

l-l teaspoon vanilla

l teaspoon grated orange rind

Method: The eras have in be It room temperature before you start beating them. Another thing y.u have to be careful of is that there isn't a speck of egg yolk in the egg whites, otherwise the whites will not beat up u well.

One way you can avoid having this happen is to separate the yolks from the whites when the eggs are cold (when you take them from the refrigerator). The yolks seem to be firmer when they are cold, and less apt to break. when the eggs are separated, place a cover over tne whites an yolk; and allow to stand until they reach room temperature.

Add the salt to the egg whites ano beat until foamy, then add the cream of tartar and continue beat- ing until the egg whites stand up ‘in peaks, but are not dry.
