Here is another gorgeous use for your meringue-the one you make for pie-topping, not the sweeter mixture that. is used for the bubbles of goodness that. are called merin- gue shells. The full instructions for the meringue are elscwbere on this page.

From a thin sheet or slice of i sponge cake, cut out. shapes round- ed at one end and pointed at the other like the shape of a half-pear, but a little larger. Upon these, dis- pose halves of cooked pears from which the core has been taken. Fill the corc-spaccs with fine-chopped. preserved ginger and pipe meringue mixture ribove, to cover the surface of the pears; dredge with granulat- ccl sugar and set into s. slow oven, to cook the meringue. Tue merin- gue should not color until 11m. ten minutes in the oven. Serve with the syrup from the pears or with cream or boiled custard made with the egg-yolks.
