"Instead of providing assorted flavors of ice cream. Madame, i would suggest. for a change, serv- ing a choice of assorted sauces with plain vanilla ice cream. such as half-thawed frozen raspberries butterscotch or chocolat sauce."

Butterscotch Ica-Cream sauce: In a saucepan, combine 1 c. light brown sugar, l-3 c. light cream or undiluted evaporated milk. 2V; tbsp. white corn syrup and 3 tbsp. butter. Stir - heat until boiling; slow-boll 8 min.

Add 1-! tsp. each vanilla and cider vinegar. Use hot or cold.

Chocolate Mocha Ice Cream Sauce: In a pt. saucepan. blend Vs c. powdered cocoa. v. tsp. in- atant coffee, 14 c. hot water, in

corn syrup. Cook-stir until boiling rapidly.

Remove from the heat. Add Vs tsp. pure vanilla extract. Use hot or cold.

Monday Dinner: Mixed cream of Vegetable soup: broiled chicken quarters: parslied potatoes; cel- Gfled lreen peas; lruited cole IIIW; ice cream; assorted sauces hot or iced coffee or tea.

Mixed Cream of Vegetable Soup Fine-chop, or put through the food chopper, 1 peeled medium-sized parsnip. 2 peeled small white tur- nips, 1 peeled carrot, 4 stalks cel- ery and l slice onion. Place in a saucepan.

Add 1 tsp. salt, is tsp. pepper, 2 boiling water and iv: tbsp. butter or margarine.

Cover. Iaam-boil 2) min. or un- til bite-tender.

Meantime, scald 1 qt. Whole milk. Add to cooked vegetables.

Blend 2 tbsp. flour with 2 tbsp. additional milk and stir in. Sim- mer 2 min.

Serve in bowls. Garnish with minced parsley, chives or dill.

Trick of the Chef:

Add 34 c. small-diced celery when cooking fresh or frozen green peas. Use a pinch oi dried

The climax of the evening was a delightful meal oi fried welners and rolls, topped off with a var- iety oi sweets to which all did ample Justice.
