Reduce the heat to 350 degrees F.: continue to roast 30 min. to the pound. Baste 3 times with 2'12 tbsp. lemon juice mixed with 1-3 c. water and 2 tbsp. butter or margarine. To serve, place on a platter. Re- move pics and string. Garnish with sauteed mushroom caps and pars- ley. Make not - too - thick brown gravy. Dry - Trim the stems from
