Uanoed Corn Pudding.—One can of corn, drained ,three eggs,two tablespoon fuls of melted butter, one tablespoon- fui of sugar; a little salt; two cupfuls of milk; one tablespoonful of corn starch, wet upinthe milk. Beat eggs, sugar and butter together; then add the corn. Salt the milk and dissolve the corn starch well in it, and pour by degrees, upon the rest, mixing well. Bake in a greas ed bake-dish three-quarters of an hour. Keep covered until nearly done ;_ then, brown.

Baked Salmon Trout.—Have your trout nicely cleaned, but it must be} handled very gently, and lay ina drip-| ping-pan with water and butter just sufficient tokeep it from scorching. Bake slowly, basting frequently. When nearly done prepare a sauce in the| following manner: Have ready a_ half-| pint of cream, a gill of milk, two table spoons of melted butter, the beaten | white of an egg and some chopped | parsley; put these ingredients into a} farina kettle and let it get boiling hot. | Serve the fish in a hot dish with a few; spoonfuls of the sauce over it.

Boiled Chicken and Rice.—Clean, wash, and stuff a full-grown fowl as for rousting, and sew it up snugly in : piece of clean white mosquito netting. Have ready a pot of scalding—not quite boiling—water, put in the fowl, and bring to a steady,but not violent, boil. Allow in cooking twelve minutes to the | pound. Half an hour before it is done, take out a cup of the liquor, skim and strain it into a tin pail, and season well. When done stir in with a fork a teaspoonful of butter and the same of minced parsley. Beat one egg light, and stir in the same way, cook one minute,and take from the fire. Whenthe chicken is done, undo the netting, make a flattened mound of the rice, and lay the fowl on top. Serve hot,Send around a boat of drawn butter with it, using for it another cupful of liquor strained, a teaspoonful of butter, a tablespoon- ful of flour, salt, pepper,and, it possible a beatenegg. Boil two minutes. An old fowl may be made tender by putting iton in cold water, and cooking very slowly fifteen minutes to the pound. Of course the broth will be used for next day’s soup.

leave Charlottetown for Orwell Brosh Whart; leaving Urwell Brush Wharf at seven a. m., for Charlottetown, calling at China Point and Halliday’s Wharves; leaving Charlottetown, at three p. m., for Haliday’s, China Point and Brash Wharves, where she will remain over night.

Wednesday, will leave Brush W harf for Char- lottetown at seven a. m., calling at ¢ hina Point and Halliday’s Wharves; leaving Charlottetown at three p. m. to return, remaining at Brush Wharf over night.

Excursion return ticketa will be issued from

harlottetown to Orwell every Thursday even-

ing, at one first-class fare. Also, excursion return tickets will be issued every Saturuay to Crapaud, at one first-class fare.
