MANAGEMeN'r on Portia—In Europe, the Russian pork bears a high price, anti its quality is supposed to be owing to the pickle in which it is preserved. This is called “ the Empress ol'Russin’s brine,” and is prepared as follows: Boil together, over a gentle ﬁre, six pounds of common salt, (that in most common use in Russia is rock salt) two pounds of powdered loaf sugar, three ounces ofsaltpetre, and three gallons of spring or pure water. Skim it will boiling, and when qttite cold pour rt over the meat, every part of which must be covered with the brine. Small pork while he suﬁiciently cured in four or five days; hams intended for drying, two weeks,unless they are very large. This pickle may be used again antl again, it it he fresh boiletl up with a small ad- dition to the ingredients. Before put- ting the meat into the brine, wash it in water, press out the blood and wipe it 1 loan. Pickling tubs should be larger at the bottom than at the top, by which means. when well packed, the pork will retain its place until the last layer is ex- hausted. \Vhen the pork is cool, it may be cut up, the hams and shoulders reserv- ed for bacon, and the remainder salted. Cover the bottom ofthe tub or barrel with rock suit, and on it place a layer ofmcat, and so on till the tub is filled. Use the salt liberally, and till the barrel with brine, boiled anti skinned, and then cool- ed. -Pictort'al Times.

Samples have arrived in this country and prove to be very similar to Indigo in all respects except that the color is intensely black. 'l‘bis gentleman is stated to have observed the natives dyeing cloth of the most beau- tiful black color, and upon inquiring where they got it from. they showed a plant and the process of making the li- quid.
