Experience proving it to be va- uable for the above mentioned'qualities, it is still retained in- their supplies. it has long been in use on board of German and Dutch national vessels, as well as merchant ships, the crews of .which, even during the longest voy- ages, remain perfectly free from scorhutic com- plaints. From time immemorial, it has formed a favourite standing dish to the robust inha- bitants of the north of Europe during their long and rigorous Witter-s. It is recommended by cheapness, savor, salubrity and simplicity, of preparation. Cabbage should be taken that has sustained two or three white frosts revious to being gathered; sound, compact Beads should be chosen, the green and imper-

When Sauerkraut is taken out of the tub to cobk, it phould always be washed with fresh water and cooked' without the addition of any other vegetable. A piece of fat pork—beef- ora fat goose, enclosed with the Sauerkraut in a close tin vessel, and steWed three hours, forms an excellent dish, and is the more. valu- able as it can be had at the seasons of the ear, and under circumstances that vegeta- les cannot be procured.
