Spoiling Coffee. —The fragrant aroma |

of coffee coming from the breaktast room may be very delightful, but it teils that the coffee is being spoiled by too mueh boiling in an unclosed vessel. Coffee is best just to “come to a boil,” then serv ed promptly.

Egg Toasi.—Beat 4 eggs, yolks and whites together, theroughly; put two

tublespoonfuls of butter into a saucepan | 0

and me'!t slowly ; then pour in the eggs, and heat without boiling ever a slow! fire, stirring constantly; add a little! salt, and, when hot, spread on slices of) nicely browned toast and serve at| once.

Chocolate Pudding.—One quarter of| milk, four tablespoonfuls of cornstarch | dissolved in one cup of milk to which | add two tablespoonfuls of grated choco- | late. Boil the remainder of the milk | with two-thirds of a cup of sugar, add the corpstarch and chocolate boil three minutes, add one tablespoonful of salt. CURRENT NOTES.

The shipments of sugar from Moncton refinery during three days and a half last week amounted to 1,347 barrels, or sufficient to fill nearly 20 car loads. The shipments were made to Toronto, St. John, and different points in Nova Scotia and Cape Breton.

Thanks to the farmers and workers there is no chance fora panic in the United States. “The country,” says the Kansas City Times, ‘‘is too full of wheat, of produce, of money,ef goods, to get up a geauine panic. .Tradeis a little dull, but there is no good cause for business to be panicky.”

On Saturday morning last, Big John Canadian, the well known Caughnawaga pilot ran the Lachine rapids, Montreal, along with seven other indians, at two o'clock, in a boat 22 feet long by four feet beam. Big John says that this is the first time the rapids have been run in the dark.

Mr. Geo. H. Shattack brought te Halifax on Menday night, from the Gallighar Gold Mining and Milling Coimpany’s works at Isaacs’s Harbor a bar of gold weighing over 201 oz,, the product of 55 tons of quartz at a total expense of production of $2,150. The mine is looking as well as ever and the output is still increasing.

What is described as “the improved outlook in the leather trade,” of which we are glad to learn, has induced the Fredericton Leather Co., to resume op- erations at theirlarge tannery, which has been shut down since last fall. And the Moncton Times understands that
