Several Types Of Meal Make Very Good Steak

“When is a steak not a steak ~I mean to the average per- son?" chuckled the Chef. “When it‘s a cut of any meal except beef," he answered himself.

“In reality, there are several meats beside beef that make very good steaks. For example: velal steak, pork steak, ham steak, liver steak, venison steak and lamb steak.

Just before serving, tos. again with 12 c. Italian style dressing. Garnish with 1 large tomato, cut in eighths.

Broccoli Mimosa: Wash, drain and trim 2 lbs. fresh broccoli. Cut large stalks in quarters; split to cook through as quickly as the tender broccoli tops.

Place in a saucepan. Pour in boiling water to depth of 1h in. Add 1%: tsp. salt. Cook uncovered five min.

Cover and cook until fork—I tender, about 20 min. ’

Meantime, make 2 c. medium- thick white sauce, using two c. milk or 1‘») c. milk and 1/2 c. chicken broth. Season with Vt tsp. powdered mustard.

Cook 3 eggs until hard boiled. Slice 2 of the eggs and the white of 1. Add to the sauce.

Put remaining hard - cooked

yolk through a sieve and reserve.
