Preparation time: 20 minutes \ Cooking time: so mlnuteo Serves live

Heat in a large pot over medium heat: 1 tbsp. (15 mL) oil

Add:

1/2 lb. (0.25 kg) hamburger Fry until brown. Drain grease.

While the hamburger is cooking, chop up:

1 stalk celery

1/2 green pepper

2 small cooking onions

1 cup (250 mL) lresh mushrooms Add vegetables to meat.

Helpful Hints:

0 Spices can be temperamental. The chili powder is not given in an exact amount because you may like your chili mild or spicy. The longer the spices cook, the stronger they get. Cayenne is an especially tricky character.

1 can, 19 oz. (540 mL) kidney beans, undnlned

Cook for 30 minutes over low heat, covered. -

Add:

in to 2 tsp. (2 to 1 0 mL) chili powder

1/4 top. (1 mL) cayenne

1/2 top. (2 mL) pepper

Cook over low heat for another 30 minutes, covered.

though, it doesn’t hurt to let the chili fl cook longer. -

0 Chili is best with fresh bread and liquid of your choice. Have lots to drink on hand, especially if you've been heavy on the spices.

0 Although this recipe makes enough for five, you won’t have trouble using I it up. It keeps well in the fridge or freezer.

Island Images ’83 ‘

island images ’83 will open at Confederation Centre Art Gallery and Museum in early February-1983. This art exhibition, spon- sored for some years by the Friends, is open to all artists resident in the province.

A more specific announcement will be mailed in the nearfuture to artists who have , submitted works to the Exhibition in the past. Artists who did submit a work to the last Island Images may contact the Friends office at 892-2464 and be added to the mailing list. We would appreciate hearing
