SaLeratus.— The free use of this ar- ticle in domestic cooking is extremely injurious ; it cases great muscular pros- tration when taken into the stomach. It is poison to the alimementary canal, causing great irritation to the passage.
Hovst Piranrs—M*x a few ta'le spoontuls of charcoal with the earth io your flower-pots, and you will be sur prised at the invigorating effects upon the choice and delicate plants. The colour of the flower is greatly increased in richness by the use of charcoal.
Soup.—Take about four pounds of good, lean meat, and boil in about four quarts of water; pare about six small onions, and the same quantity of celery, cut in pieces an inch long; one yellow turnip, cut in small pieces, and the same quantity of potatoes; boil in a separate saucepan until half done, as that rids the vegetable of part of the unplesant smell ; when the meat is tender remove it from the broth, and add the vegetables—not the water they were bviled in; then beat well one egg and one tablespoonful of milk, thicken with prepared flour; drop in in small quantities to soak; the soup is ready to be taken up, as it must not boil more than five minutes, or it wall be too thick; if the meat is allowed to remain in the soup after it is tender the soup will be full of fragments of it. This soup is excellent, and as good next

A Mertruop or CooKINa or OLD Fow.s nor Fir ror Roastine.—Let the birds be kept as long as possible huaog up as long as possible huog up where there is a free circulation of air; and, when picked and prepared for dressing, cover the bottom of a saucepan with slices of good fresh English bacon, upon upon which lay the bird, then add a pint of good, strong, well-seasoned gravy; place the saucepan upon a slow fire, the cover being on, and let the contents sim- mer for an hour and a half or two hours, turning the bird occasionally and supply- ing more gravy, if necessary ; when done, let the contents be put away in a dish to cool. Birds dressed in this manner «.¢ good hot, but they are far better cvid. For preparing poultry for the table M. Soyer invented a plan, by cutting the sinews of a {bird it not only appears plumper and fulier when cooked, as the heat is liable to contract the sinews, but it also affords facilities for carviag when the sinews are divided ; they are trussed in the usual way, only using strings in- stead of skewers. > ++ >.
