TURKEYS FOR BRITAIN.

Until recently it has been usual in the trade in Great Britain for different firms to make a specialty of dealing in the products of one particular country. Professor Rob- ertson in his report for 1897 states that it is now becsming more commun for indi-~ vidual firms to handle poultry from sever- al countries. This will ultimately result in the poultry of the best quality and in the best condition finding its way into the hands ot the bestcustomers. Poultry has not been generally used as an article of diet in the same sense as beef, mutton and bacon. The price was, relatively, con- siderably higher. When Canadian turkeys Lecome knowo in Great Britain and are available there at the reavonable prices at which they can be Jaiddown with a profit to the producers in Canada, they will no doubt create an ever-growing demand for themselves. Formerly turkeys were ob- tainable only from November till March; now through the facilities provided by cold storage, they are fouod on the bills of fare in nearly all hotela, every weak of the year, While they do notappear so gene:s ally after March on the tables of privae houses, no doubt there will be an inpcreats ing demand for thera st what was former- ly out~of~season times,

Asa rule, continues the Professor, the turkeys in Northern France and in many countries in Kngland are fattened to a bet~ ‘er finish than the turkeys in Canada. The practice in these places is to feed the turs keys particularly well for about three } weeks before the tine at which they are io | bekilled. During the fattening period the ; turkeys will gain ia weight quicker and produce a better quality of flesh if they a'e keptin large sheds. These sheds may be wire-netted in front, asthe birds must have plenty of light and fresh air. Ten feet square of floor room will be enough for every ten turkeys. The sheds should

be furnished with perches made from scantling slightly rounded on the top, about three inches wide, and about three feet

above the groand. These may be remov- ed during tbe day time. Tne shed should be kept clean. A quantity of coarse grit jand sand should be provided. Fresh straw should be put on the floor quite often. Meal composed of a mixture of ground oats, grouod barley, ground wheat and ground buck wheat, make a first clasa food. It should be pzepared in the form of a paste or dough mixed with skim«milk, or sour. Some feeders prefer the sour milk. This soft feed should be given ie the morningand also in the afternoon. During the fattening period, it is not pri fite able to feed whole prain, unless it be bou~ ed and steamed until quite soft.

During the last ten days of the fatteniog period, itis a good plan to add obout half an Ounce of fat per bird to the fattening mixture. That gives the flesh an exqui- eite, soft quality. The feeding of Indian

coro is said to result in a yellow sbade of flesh, most noticeeble in the fat of the fowl,

The effect of feeding milk is to whiten

the flesh, which is desirable. Regular feeding in the manner indicated wiil cause the birds to put on a large quantity of good flesh on the most valuable parts. The French poultry fateners put ove third Ounce of ealt per quart in the wate. used in preparing the fuod,

The government, be said, would recognize the independence of the South African Re- publics and work barmeniously with them, leaving external relationships with them to be dealt with by the British high

commissioner, whom the government would support in the development of South Afnca. Tho governweut would

“A British guuboat was in the river at the time. Its non-resistance is regarded

as the virtual British abandonment of the whole of Manchuria to the Russians, and gives Russia an invaluable strategic posi- tion. Great Britaiv is certain to lose the New Chwang trade, of which it had had 80 per cent.”
