Of those that were boiled and tasted | the two best that were selected by the judges were those of Miss C. F. Dolben, which had been simply packed in com- mon sait. These had not lost sensibly by evaporation, had good consistent albumeo, and they were the best tasted when boiied. There was, however,very slight difference between them and those that received the second prize. These Were crosses of various breeds, all tine large eggs. There were shown | ty Miss Rose Hubbard, who gave the icllowing as the method of preserva- vation:—Melt one part of white. wax to two parts of spermaceti,boil and mix thoroughly ; or two parts clarified suet to one of wax and two of spermaceti. Take new-laid eggs, rub with antiseptic salper fine rice starch. Wrap each exe in fine tissne paper; putting the broad end dewnwards, screw the paper tightly at the top, leaving an ineh to hold itby. Dip the egg rapidly into the fat heated to 100 degrees. With- draw and leave to cool, Pack broad end downwards in dry white sand or sawdust.
