While the overall production oi bnttcr in Canada _\\'as greater in 1947 than in 1946 by nearly l9 million pounds, the lilcrease was nlade up ln the four provinces. namely: Quebec, Ontario, Manl- toba, and Alberta. I found that very rnuch the same conditions, exist in the cheese in- dustry in Ontario and Quebec as those which prevail in our c-wn Province: old and ill-equinned plants with a small output which scarcely enables them to meet the competition of other branches of the dairy industry.

This observation is amply born! Wt by reference to page 129:0! the Ontario Roval Commission on Milk. conducted hv the Honour- able Dalton C. Wells.

It must not be lost sight If imvever. that cheese is of VIII inmrtance to the whole Canadian iairy industry.

There is always an active ex- port. demand, mt good prices," for all the cheese we can supply to the British market where Csna. dian cheddar cheese is recognized as the standard of quality.

If all the milk that goes into the niu iacture of cheese in Canada was turned into butter we‘ would soon find ourselves with an ex- portable surplus oi that commod- ity which does not meet with the same favorable reception on the export market as does our cheese. eThe Government of Canada re- cognizing this fact, has made pro- vision under the "Cheese and Churn" factory improvement act Chapter 13, Statutes oi Canada i939 and amendment oi 1943 whereby- if two or more factories agree to amalgamate and erect an up-to-dete plant. the Federal Government will pay 50 per cent of the cost.

This applies to all Canada. and in the case oi Ontario it is fur- ther supplemented by the Local Government.

I talked this mutter over per- sonally with Mr. Singleton and he told me that in view oi the fact that motor trucks now gather milk from great distances even up to 30 or if) miles instead of 4 to J miles with horse and wagon, that amalgamation was quite feasible.

The big questionfilt the conven~ tion and the one that is causing the dairy farmers of Canada the most concern is the question oi oleomargarine. .

Apparently caused by the high price of butter. there seems to he an insistent demand by a certain body oi consumers for a cheapel spread.

A bill for its admission into Canada is now before ‘the Senate and the House oi Commons at _Ottawa.

At the request of Mr. Earl Kit- chen; Secretary of the Canadian Dairymenb Association, your Dir- ectors at their lest meeting pre- pared the following resolution:

"Whereas, the dairy industry oi Canada is divided into several different branches. the most im- portant oi which are the fluid milk trade. the manufacture of butter. cheese and concentrated milk products.

“And whereas. any action that might be taken that would inter- Iere with the successful operation of any of these. branches could not help but react unfavorabiy upon the dairy industry,

"And whereas. notwithstanding the scarcity of lind the high cost of farm labor, together with the advancing iced prices, the produc- tion ofbutter in Canada increas- ed in‘ i947 by twenty million pounds.

“And whereas, if given a fair chalice, a further effort. will be made during the current season w bridge the gap between Pmduli- tlon and the very high consumP- tlori of butter in Canada,

"And whereas, lucurative prices are being offered for good dairy cows and heifers for export 1W") Canada, ‘
