Nice Tea Cake.—When company comes, avd | have no cake, this is how I make one. fake a cupful of sugar, a cupful of sour cream, an egg, 3 teaspoonful of soda, and flavor with lemon or nutmeg.; I prefer nutmeg. It is nice, and easily made.

Mrs. Hodgman’s Mock Apple Pie.—One aod a half pounded crackers, a cupful and a wird of boiling water, a cupful of sngar. the grated rind and juice of one Jemon, & teaspoonful of butter and a pineh of salt; bake between crusts, ag an apple pie.

Vo Preserve Hams io Summer.—Slice all feom the bone ready to fry ;-then have ready a stone jar or pail, as you may have, to keep it in. Thoroughly fry it, and pack it, covering it with lard. In this way itis always ready. for table just by warming, avd will keep sweet the year round.

Vanilla Cookies.—-A cupful of $butter, a cupful of sugar, One egg, a smal} teaspoon- ral of cream tarter, half a teaspoonfal of sda, half a cupful of milk (scant measure), tivoar Ull stuff enough to roll without trou- ble: flavor with vanilla... Roll thin, sprinkle suear over, and roll again, cut out, and bake in a quick oven.
