Tile short collrse for cheese and butter makers for the season has just closed. ._ The cheese course was put on to demonstrate to the makers the different grades and also the principal detects in- each grade. Samples of each grade were used for this purpose-and the defects were fully gone into by 'l‘. J. Hicks of thc Graders Staff, Mont- renl, who had a large experience both in grading and the manufac- ture of cheese. it was the opinion of those present if our lllllk was delivered ill a siveet condition and a pure culture and starter used, this with the best method of nlanufac- ture would remove most of the objection to oltr cheese.

The butter course consisted of practical work in butter making and cream of high ucltlity was used to (lemonsirate the advantages of pasteurization and neutralization on the flavour and keeping qualities of butter. For the further education of the butter mnkers wo had samples of butter nlnde irolll both rnw and pasteurized cream which plainly showed the superior keeping qualities of butler nlnde by np-to- date iil('|.h0ilS and modern equip- mcnt. This work was in charge of J. A. MacDonald formerly of Orwell nnd who had u large ex- perience in Western Canada where the greatest’ improvement has been made in tile butter industry. Mr. MacDonald is now present on the graderg stuff in Montreal and has an opportunity of seeing samples of biltter made in all part; of Canada and is of the opin- ion that if cream was graded on. nd paid for on qnnlity basis it would put our dairy industry on n better footing. i FRIDAY

About sixty shareholders attend- ed the annual meeting of thc Cllar- lottetown Hotel Company Limited, operating Victoria and Queen Hotels, held in the dining room of the Victoria Hotel last evening. The business meeting was preced- ed by a splendid supper which was greatly enjoyed. Mlislc was furn- ished by the Casino Orchestra. Master Trailior danced the Hilli- land Fling and Mr. Chas. Earle very kindly gave two splendid solos.

The meeting was presided over by Mr. L. iii. Prowse, vice president in the absence of the president, Mr. W. K. Rogers.

Citizens generally will deeply re- gret to learn of the death of Mr. Henry M. Chandler which occurred at hi5 home here Wednesday night after a prolonged illness. He was born at East Royalty and has pass- 6d 8W8)’ Bled fifty-one years-in the very visor of his manhood.

Mr. Chandler spent his life in Charlottetown. He was engaged for many years in the stone cutt- ing and monument making busi- ness the firm being known as Chandler k Bell. lli health however, necessitated, his retire- ment some time ago. and since then he had lived quietly in the hope that complete rest and the absence of business cares would restore him to his wanted health, and notwithstanding all that could be done he gradually became weak- er until he was called to his re- ward.

Mr. Chandler was a member of several societies, namely Sons of England, The Orangelnen, Odd Fellows and Masons.

He was well known in business circles and regarded as an upright man of highest integrity. His con- nections with , these different societies and his friendly disposi- tion made for him many friends and he will be much missed in dif- ferent circles in this community.

Mr. Chandler was a member of the Salvation Army and took the deepest interest in the worthy work of this remarkable Christian‘ organization.
