For fluffy- textured tapioca best an egg white until frothy. then beat in 1 tablespoon sugar as in making a meringue. Stir in the hot pudding and chill.
For a rich pudding. fold in M cup whipped cream after it cools.
Herein the test kitchen we often add quartered pitted dates to orange or lemon tapi- oca and serve it in sundae glasses with a scoop of ice - cream and a date for garnish.
