Sanitation Is Stressed In Cannery Operations

TIGNISH — A one-day course in cannery operations and sani- tation, sponsored by the federal and provincial departments of

fisheries, held in Tignish Re- gional High School yesterday afternoon and evening, was

largely attended by employers and employees from the Tignish area.

W. A. Murphy, officer in charge of the Charlottetown laboratory, acted as chairman and also spoke on canning qualities. He stressed the im- portance of the canning industry. in the economy of the province and the workers’ role in this field. Mention was made that the quality of the 1961 pack was better than usual.

R. L. Doyle, laboratory field representative from Charlotte- town, dealt with operations in- side the cannery. The speaker

Poor sanitation affects the produce in the fish plant, he said. So very often a well is mot properly protected against eurface drain and carries bac- teria along with rodents and

hidden sources that accumulate bacteria. Cleaning down a work table is very important in a cannery, he stressed.

S. Varge, bacteriologist from Charlottetown, dem ons trated bacteria and passed samples around for the employees to examine. He spoke on the care of the meat and how bacteria is present in lobster meat and how it is spread by unclean hands, through infected fingers and boils. It is inadvisable to let anyone work at food who has any of these ills, he stated. | Food poisoning and typhoid bacteria were described at great length.

Following a break Mr. Varge was asked to tell of his ex- periences with the Communist party in 1956 when he escaped during the Hungarian uprising. R. D. McKinnon, fishery officer from Alberton expressed ap- preciation to Mr. Varge for his | informative address.

Special bonuses for employ- ees were handed out by the assistant manager of Tignish Fisheries, Roy MacLeod and factory superintendent, Aubin Gallant. A vote of thanks was extended the manager of the fishery plant, Wilson Shea

The evening session was ad- dressed by Rev. Vincent Murn- aghan, Charlottetown, who spoke on labor-management re- lations which he described as a very broad field. He com- mended Tignish Fisheries for its excellent co-operation with em- ployees.

The final speaker was Eugene Gorman, deputy minister of fisheries.
