How To Keep Canadian Cheese

In this week of Cheese-mindedness it is well to take a little time to consider how most’ properly to handle our home made product.

Canadian Cheddar cheese is made in var- ious sizes and can he secured at all seasons of the year and in almost any quantity. Many peo-

days at a time, and in that case, there is no diffi- culty in keeping it. Those who live some dis- tance from a shop can buy it in large amounts and, with proper care, keep it in good condition for considerable time.

For the average family a I0—pound cheese is usually a convenient amount to buy at one time. One-half of the cheese may be preserved for future use by covering the freshly cut side with a thin layer of paraffin wax and keeping it in as cool a place as possible until required. The other half will keep fresh and moist if put on a flat plate- or sheet of waxed paper with the freshly cut side down. \Vhen serving, it is better to scoop out the amount required with a small spoon or knife, leaving the outer edge un- cut_ The cheese should be turned upside do\vn on the plate as soon as the meal is over and put away in the coolest place available. This will prevent the cheese from becoming hard or dry and there will be no danger of it moulding.

If cheese is allowed to become hard and dried out. it is not spoiled and should not be wasted. It can be grated and used in cooking. If very dry, cheese will keep well if put in a clean, dry, glass jar and it is just as valuable for cooking as fresh moist cheese. It will usually have a more pronounced flavor than fresh chccse and this is often desirable when combining with

other foods.

Reassuripg Prospects

Rural purchasing power this winter prom- ises to be substantially larger than in recent years, is the reassuring prediction made in the current business letter of the Bank of Montreal. ,While the yield of the wheat crop of the Prairie Provinces is disappointing and an unusually large proportion of the wheat is of low grade, it is pointed out, crops in Eastern Canada for the most part are well up to the average and in some cases above, and prices of both grain and livestock have advanced materially.

The trade of Canada these put five years, declined less than the trade of any other country In the world, with one exception-Japan. The trade of Itngland, of the Unit- ed States, of France, Italy and Germany diminished more-a great. deal more-than did Canada's. More than that, Canada's trade during the past two years of re- oovery has been increasing faster than that o1 any other country. Canada had a bigger proportion of the total of world trade last year than she had in the boom year of lum-Ottawa Journal.

Up and down the land, the weight of our pzlbic policies l-s given to stimulating the sales o! the products 0t our natural resourc- es with gross disregard of the rc- generattve capacity of the natural resources themselves. It would take time and public money, but, even- tually, without a shadow of doubt, more good Jobs can be supplied to Canadian workers from rational management of our wooded wilder- ness than can possibly develop from any pretty scheme of issuing fresh batches or coupons on the taxpay- ers’ poverty-Forest‘ - and Outdoors.

One of the most hopeful symp- toms ls the dissolution of the Brit- ish parliament. Were the interna- tlonal‘ situation regarded as dang- erous, 1t ls unlikely that. a. general election would be held. There seems to be no doubt that the national party will enter the lists as such with the machine of the Conserv- ative party behind it. Doubtless the main force against. it will be the socialist party. The Liberals may be expected to seek to retrieve some of their losses, and ppobably there will be Right Wing Conserv- atives running independently. Per- haps the Fascists may have a few candidates, but the conflict. should be between National and Socialist parties.

When a simple man is bent double with pain 100 different rem- edies will be offered to him if he cares to listen to all the old wives. These who promise most may ax- pect the best hearing. There are some patients so afraid of starting the drug habit mat they wlll endure the most. intense pain- passing of a gall or a. kidney atone- rather than have their physician give them a. hypodermic Injection of morphine. On the other lumd there are physicians who will advise their patients to try to withstand the pain rather than give them mor- phlne as the physician fears that the morphine habit may thus get. started in his patient. _

Now there are other drugs be- sides morphine that will relieve pain and will not. cause the drug habit and under condltlorm where there is great pain the patient might. be well advised to take one or other of these drugs rather than suffer very severe pain.

Of course the ordinary headache, stomacliache or other simple 1min should be endured rather than use drugs.

However when the pain is revere and is likely to be prolonged and the physician prescribes a drug to relieve the pain it, ls because from the nll round standpoint: the drug will do less harm to the body than will the pain.

Now the first. thought in medicine is to find the cause of the pain or ailment and then try to P1116 lt- A5 pain helps the physician to find what is causing the trouble he nat- urally doesn't want. to relieve the pain immediately before he has found out as much as possible, as the pain ls one of the means of finding the cause-

When the cause has been found the physician will then relieve the pain by drugs. If he has difficulty in finding the cause, he may relieve the pain anyway, rather than have the patient. suffer for any length of time.

Pain is hard on the system and if severe and prolonged, may weak- en tlie patient. so much that much of his resistance is lost. Ptaln not only lowers his body resistance but. takes away aslot of his mental fight- ing ability.

The first thought then ls that. when there is pain severe enougn to require a physician's services the patient should endeavor to with- stand the paln until the physician has made use of the pain in locat- ing the cause of the trouble.

The second thought is that. when the pain ls severe and prolonged, body and mind may suffer more by reason of the pain than if the pain were relieved by one of the simpler drugs now used for this purpose.

From time to time in recent months. cautious hints have been in circulation that the prestige and power of Mussolini are on the wane. On several occasions experts from abroad visiting Prinoe Edward Is- land have advised us to specialize ln one or more soft. cheeses, such as are being made in France, Belgium and Switzerland, and for which there is an immense demand in the old country. The prices of these cream and other fine cheeses vary from 50 to 100% above that of ched- dar, and by adopting a registered trade name the price can be main- tained even when the cheaper cheeses are sold at a loss. -

Not only are the selling prices for these finer cheeses much higher than for cheddar but, when once ln- troduced, the profit 1a better, while the employment in our local factor- ies would be far greater than at prment, because of the more elabor- ate methods of putting up, wrap- nlns. boxing. etc.
