When It Is Ready, the Satisfaction Is In “Kating It All Yourself.”

James Prosser, a famous colored aa- terer of this city, dead long ago, fur- nished the following formula for pre- paring and serving terrenin, which was published in a gastronomi journal at the time when he was on earth:

‘*You can’t enjoy terrapin unless the

day isnippin. Temperature and terra- pin go hand in hand. Now, asto your terrapin. Bless you, there is all the difference in the world in them. The more northerly isthe terrapin found the better. You eat a Florida terrapin—you needn't despise it, for terrapin is terra- pin everywhere—but you get a Chesa- peake one or a Delaware bay one, or, better stiil, a Long Island one, and there is just the difference between $10 a dozen and $36. Warm water kinder washes the delicate flavor out of them. Don’t you let Mr. Bergh know it, but your terrapin must be boiled alive. Have a good big pot, witha hot fire un- der it, so that he shan’t languish, and when it bas got on a full head of steam pophim in. WhatIam goin to giveis a recipe for a single one. If you are aw- fuily rich and go in for a gross of terra- pin, just use your multiplication table. Just as soon as he caves in watch him and try his flippers. When they part when you pry them with your finger nail, he is good. Open him nicely witb a knife. Bilin of him dislocates the snufibox. There ain’t overmuch of it, more’s the pity. When it’s come to be oily, put in your terrapin, yolks of egg, wine and all. Let it simmer gently. Bilin up two or three times does the business. What you are after is to make it blend. There ain’t nothin that must be too point ed in terrapin stew. It wants to be a quiet thing, a suave thing, just pervad- ed with a most beautiful and natural terrapin aroma. You must serve it tc the people that eats it on a hot plate, but the real thing is to have itona chafin dish, and though aman ought not to be selfish there is a kind of divine satisfaction in eatin it all yourself.’’— Philadelphia Times.

ORIGIN OF A CUSTOM. How Kissing the Bible First Started In British Courts

It is generally assumed that **kissing the book”’ is, or at any rate was until re- cently, a necessary part of the legal cere- mony of oath taking. This assumption, however, probably is not justified. It would appear that the most ancient form of swearing in the Christian church was to lay the hand upon the gospel and Bay, **So help me God and these holy go spels.’ This seems to have been the usu: J cere- mony accompanying a judicial oath until at all events the end of the sixteenth cen- tury, for Lord Coke says: “It is called a corporal oath because (the witness) touch- eth with his hand some part of the Holy Scriptures. Coke says not one word about kissing the book.
